Healthy Chocolate Muesli Bars – Nut free, Dairy Free, Wheat Free

Healthy lunchbox snacks are always in high demand around this neck of the woods. This recipe is from the lovely Paula of Mixing it up in Hong Kong and when I saw the list of ingredients, I knew I had to try it. Mixing it up in Hong Kong is one of the Thermomix blogs I read regularly. Paula has a similar take on healthy food that I do and tries to make recipes that are packed full of goodness.



These delicious bars tick so many boxes; full of nutrients, dairy free, wheat free (not that we are a wheat free household but it’s always good to mix it up), nut free (we certainly aren’t a nut free household, in fact we love them for all their goodness, but for school lunchboxes it’s handy to have nut free recipes) and lastly, not too much sugar. We have been really cutting down on our sugar lately and using Stevia. It is amazing how your tastebuds adjust.

These bars were a winner in our house, and I mean a winner. All three munchkins were raving. They told me they were the best ever and asked could I make them again. Yes, siree!....I was wrapped.

I did, of course, alter it slightly to suit what was in my pantry and Edward's intolerances: I used sunflower seeds instead of linseeds, an extra golden delicious apple instead of dates, no ginger and no sugar at all. I substituted rice bran syrup for honey. Lastly, we made them with the chocolate, though next time I will cut it back to 50g. All thought the coconut wasn't ideal my adjusted recipe was lower in salicylates which Eddie can't have too much of. Changing recipes as I go…that’s kind of how I cook but certainly the gist of the recipe was the same. And really, it’s a pretty flexible recipe.
