1 cup self raising flour :: 1 cup of milk :: 1 egg
Here is our basic pancake recipe. I say 'our' because my daughters have been making the pancakes in this house since they were six.
This recipe is super easy to remember. It is simply one::one::one and the variations go from there.
Simply throw all of your ingredients into the Thermomix bowl and blend speed 4 for 10 seconds. Take the lid off, scrape the bowl and have a look at the consistency and add more milk or flour depending on what type of pancake/flapjack/crepe/pikelet you are making
Pour from the bowl straight into the pan and you'll have the smoothest pancake batter ever, without any of the mess that used to come.
VARIATIONS:
Pikelets - Add an extra couple of tablespoons of flour
Crepes - Use plain flour and add a little more milk
Softer and fluffier - Use buttermilk instead of regular milk and an extra 1/2 tsp of baking powder
Dairy free - Use rice or soy milk (this is the version we make)
Blueberry - Add a handful of blueberries and stir with your spatula
Now you see, I don't think that even a pancake mix from the supermarket could be as simple as that. Another easy recipe to remember.

ReplyDeleteJamie Oliver uses a similar recipe, but grates in a pear or apple, which gives the pancakes a lovely sweetness.
